Bunka is a santoku with the kiritsuke tip and slightly longer.  It is comfortable to use like a santoku but with the added improvement of the slanted tip.  Kiritsuke tip is great for scoring the surface of vegetables, fish, chicken and meat.  Scoring vegetables tenderizes the skin – an advantage for pickling that also helps the brining process speed up by opening the interior to the brine.  For meat, fish and poultry skin scoring helps render the fat and opens the interior to heat when roasting or grilling.  This gives the cook more control over the cooking process for better results.  Bunka is a fun knife to use in the kitchen with Extra abilities to improve your cooking!

KEYAKI JAPANESE ZELKOVA 

Keyaki / Japanese Zelkova wood has a structure that is uniformly hard, has excellent dent resistance and is prized for its durability and workability, making it ideal for crafting fine furniture and intricate joinery.  Admired for its particularly beautiful fine grain which shines when coated in fuki urushi.   The combination of keyaki and fuki urushi the final result is similar to the warmth, deep tones and grain of Rosewood but more sustainable. Since it is heavy and very resilient, it’s one of the most favored woods to use.
