USES
Offers sharpening and honing all in one stone.  Works superbly on stainless steel and high-carbon steel knives and tools. The audible feedback and tactile feel communicate to the sharpener progress being made between the stone and the knife.
DURABILITY
Imanshi stones are harder than all but the Naniwa Professional so the stones will resist wear and offer long-lasting durability.   These stones work superbly on stainless steel and high-carbon steel knives and tools.
#1000
Allow the #1000 grit Imanshishi whetstone to soak for at least five minutes before each use.   After a few minutes of sharpening dip again to keep stone sharpening efficeintly.
#6000
Imanishi #6000 grit whetstones require only a splash of water to will sharpen knives & tools quickly.  It provides the sharpener audible feedback and a clear feel of progress.
COLOR & AESTHETIC
Creamy white & chocolate brown color. A simple, clean aesthetic make these whetstones as beautiful to look at as they are to use.  Packaged in elegant gold washi-like paper box.  Only marking is the grit number.  Perhaps the best looking stones on the market if natural-looking, minimalistic purity is your favored style.

Outstanding combi-whetstone for the price. Provides a sharpening feel remarkably similar to that experienced with a natural stone with greater consistency.  Cuts faster and better than similarly priced stones.  Grit #6000 side leaves a 70% mirror finish.   The feedback and tactile feel make Imanishi whetstones one of the best you can buy. Imanishi Seito is truly an small artisan manufacturer and one of our favorite whetstones to use at Kikusumi.
IMASHISI SEITO  今西砥石

Imanishi water stones, manufactured by Imanishi in Kyoto, Japan, generate a sharpening feel remarkably similar to that experienced with a natural stone. These medium-hard stones do not need very much water and will cut metal at a rapid rate. When sharpening you will hear and feel the effect of stone on the blade. When you check your work, you will be surprised by how much the stone has removed. Anyone with some experience of Japanese water stones will love this Bester with its positive responsiveness during the whole sharpening and honing process.

Being relatively hard, this combination stone does not wear very quickly. Allow for at least five minutes soaking time before use. The coarser side often profits from another quick dip in the water after a few minutes of sharpening to keep it cutting at its optimal rate.

These medium-hard stones do not need very much water and will cut metal at a rapid rate. When sharpening you will hear and feel the effect of stone on the blade. When you check your work, you will be surprised by how much the stone has removed. The stone’s response to user actions is fairly direct – this will be appreciated by anyone who remembers grinding away on whetstones without sensing whether any progress is being made.

Being relatively hard, the stones do not wear very quickly. Allow for at least five minutes soaking time before use. The coarser stones often profit from another quick dip in the water after a few minutes of sharpening to keep them cutting at their optimal rate. These stones work well on stainless steel as well as high-carbon and tool steels. The 400, 4000 and 8000 grit stones are somewhat harder than the 700, 1000, 1200, and 2000 grit stones. The listed stone sizes are approximate, as Bester stones are usually a few millimetres larger than their nominal size.

WHY NO BASE?
It is better to have no base so both top and bottom of the stone can be used which saves time flattening the stone.  The bases are not reused so become garbage which contributes to the environmental damage.  If you want a much better solution try the Kikusumi Hinoki Wood Whetstone holder.
HOW TO USE
Only soak the #1000 grit whetstone (chestnut brown). Simply apply water on the surface when ready to use. #6000 grit whetstone (white) requires only a splash of water to sharpen knives & tools so do not soak it. Rinse and wipe dry with a hand towel when done, and allow air dry at room temp. Do not leave in water.  Wash the knife blade after using the stone to prevent reaction with the magnesium in the Imanishi stone.  Clean the whetstone with the Kikusumi Fixit cube provided.
HOW TO LEVEL
With use, a synthetic stone will become slightly concave in the middle and, as a flat surface is necessary for sharpening, they need to be leveled out routinely with a stone fixer.
HOW TO CLEAN
We also conveniently include a Polishing/Fixing/Rust Eraser for maintenance of the stone surface such as removing metal bits and stains.  If the stone’s performance is slowing down, or seems to be diminishing, you can clean using a rust eraser, nagura stone, dressing stone, or a flattening plate. Be sure to clean the entire surface of the whetstone when using any of these methods to ensure even wear of the whetstone’s surface.
WHY WHETSTONES
To obtain a truly sharp edge, you must hand sharpen your Japanese knives with Japanese water stones. The process of sharpening on a stone is like sanding wood.  Each pass of the whetstone cuts away material from the blade .  Dividing the blade in stages allows the sharpener to shape and polish the metal to an acute edge. Water stones come in a broad range of grits, from very rough to fine, for this purpose. They are referred to as water stones as water is the lubricant adding the sharpening process.
